Next Level Chelsea Buns
Continuing our baking adventures with the book “Breadsong: How Baking Changed Our Lives” today we tried the “Next Level Chelsea Buns” - the recipe is readily available in the Guardian article about the book and The Orange Bakery. Wow!
There are some key differences to traditional recipes - the dried fruit (including cranberries) is soaked overnight in Earl Grey tea with the addition of some garam masala and there are thin slices of apple in the folds. The overall effect is a huge punch of flavour into what is often just sugary, bland bread, and no burnt, dry fruit. Easy to see why these are popular at their bakery. A very clever step up from the standard recipe.
